Pi Day

It's Pi Day, you guys (3.14), and I usually celebrate by baking up a fresh pie to enjoy with Jesse & friends. This year, however, I'm on the road all day for work and we'll sadly be pie-less. I figured I'd share with you some pies I'd love to bake (& last year's mixed berry pie).

Last March 14, I hit up the small grocery store in my old neighborhood on my walk home from the subway, grabbing pie-crust-in-a-box, frozen berries, sugar, cornstarch, and a lemon. If I were Jaisa, I'd have the full recipe for you with photos and a step-by-step guide. I'm not, so what I'm sharing is the photo I took last year using my phone...


...and the assurance that it was really pretty simple. Make the pie crust according to the directions on the box. Toss the frozen berries with a spoonful of sugar (I don't like it too sweet) and 3 tablespoons of cornstarch to thicken the filling. Mix in a squeeze of lemon juice and fill your pie with the berries. Then either place a full top crust on or, as I did, make a lattice crust. Cover your pie with tin foil, bake for 20 minutes at 350 degrees, remove the foil and bake for another 10 minutes. Serve with vanilla ice cream and enjoy!

  2. Yum Yum in my tum!! The mini pies are so cute...if it had cheeks I'd pinch em'!! :-) I'm working late today so I'll be pieless too :'( maybe I'll buy some and have it as my midnight snack. Hmmm........

  3. Yumm :) Those pies looks so delicious! In high school my pre-cal teacher used to let us celebrate pi day.. it was my favorite day of the year to say the least!
