Manic Monday Kale Shake

I realized it's finally time to represent for the vegetarians on this blog.  If Jaisa's bacon stuffed bacon recipes aren't your thing (Oh?  They are?  I'm the only one who doesn't eat bacon??), here's an easy way to start off your day with some greens.

This Monday was a little different, with the gained hour, but most Mondays I have a hard time dragging myself out of bed.  Here's what I make myself - I promise it works like magic!  The recipe is adapted from Tupelo Honey, but I don't follow it too too closely...I usually just blend in whatever fruits I have on hand:


1 bunch of kale (2-4 cups)
1/2 tablespoon of flaxseeds (I start with whole flaxseeds and grind them myself)
1/2 cup of milk (I use almond milk)
1 bag of frozen berries
2 cups of ice

Blend everything up - I start with the kale and then add the berries, flaxseeds, milk, then ice.  You can also throw in a banana, peaches, an apple...whatever fruit you have around.  The sweetness of the fruit really cuts the taste of the kale.


I find this keeps me more alert than coffee does and that's a good thing for today because I have to finish off painting color samples on our living room walls after work.  Happy Monday - stay awake and stay homey!

  1. Kale smoothies are the best. I add mangoes to mine instead of berries, it makes it a nice green color and tastes somewhat tropical. Almond milk is a must!
