Grilled Bread with Avocado

Stop whatever you are doing and collect/buy/steal/pillage for the following ingredients.  Just do it.  You'll totally thank me.  Actually, thank Bon Appetit for this incredible recipe. 


Ripe Avocado 
Fresh Garlic 
Sea or Kosher Salt
Extra Virgin Olive Oil 
Red Pepper Flakes 
Good, Crusty Bread 

 

This recipe is sooooo easy.  

Cut a nice thick cut of bread and drizzle each side with some olive oil.  Grill the bread until it's nice and crusty and toasty and yummy (either on a panini pan or outdoor grill).  You can definitely toast it, but grilling the bread gives a totally different flavor.  As soon as the bread is done, rub each side with a garlic clove.  


Next, either mash or cube up some avocado and place on top of the bread.  You can tell that an avocado is ripe when it gives in a little when you press it.  Also, you can flick off the stem on the top and if it's green underneath, that's another way to tell it's ripe.  


 Anyway, drizzle with some more olive oil and then sprinkle with kosher or sea salt and some red pepper flakes.  Listen to me when I say this:  THIS IS SO DELICIOUS AND EASY TO MAKE.  I am addicted. 



Charlie freaking loved this and he never eats stuff like this.  As he put it:  "I could eat this every single day."  YUMMMM.   Try it out and stay hungry!

  6. I made this last night for a predinner appetizer and my husband and I LOVED it! I even took a picture and instagramed it (imacrazymomof4) tonight as I was getting dinner started, it was all I could think about so I made it again. My daughter also loved it!
