Panozzo's

A lot of people ask me how I come up with my recipes.  Besides the fact that I spend all day every day dreaming about food, I often get inspiration from the outstanding food in Chicago.  Every weekend Charlie and I head out and try something new.  We recently saw Panozzo's on Diners, Drive Ins, and Dives so we went to check it out.  This time, I photographed our sandwiches so I could share with you how amazing they are. 

This is Panozzo's Porchino sandwich.  It's.  To.  Die.  For.  This is the description from the restaurant:


‘Like Italian Carnitas’ is the best description for this delicious assault of fat and flavor. We chunk up our house porchetta, cook it down in its own juices then pile it onto a Bolino roll and crown with pickled fennel.  

Delicious assault is right.  Oh baby.  They balance the butteriness of the pork with light, crispy pickled fennel.  Sound familiar? This was my inspiration for Porchetta and Pickled Fennel Crostini.

Mmmmm.  The crispy bread soaks up all of the juice, working like a flavor sponge.
We also got their meatball sub.  Their meatballs are unbelievably moist.

Yum.  I think they put raisins in their meatballs to add a touch of sweetness.  This works perfectly because the banana peppers add a kick of heat.  Where are your favorite weekend spots?  Stay hungry!
