Brunch at Publican

Publican is one of my favorite restaurants in Chicago.  It was actually the first place I have every had raw oysters. Weird, seeing as I'm from Maine and have had access to raw oysters my entire life. Why not start in the midwest, 1,000 miles from the ocean?

I thought I would share some of the incredible dishes we had this morning.  Publican is more of a dinner place, but ever since I had their brunch this is the reason why I come here.  Just love this place.


We started with frites with fried eggs.  I love eggs.  I'm actually obsessed with them.  I obviously couldn't care less about egg whites...I live for what you're not supposed to eat - the yolks.  So creamy and savory.  Perfect thing to dip french fries in that have been kissed with just the right amount of sea salt.  DIVINE.


My husband got the smoked pork shoulder with a sunny side up egg, kale, polenta & pickled chard stems.  The pork shoulder was cooked perfectly and the polenta was creamy and seasoned perfectly.  Polenta is basically the Italian version of southern grits.


This is the publican bacon.  THE publican bacon.  They braise the pork belly in maple syrup so it's salty and sweet, crispy on the outside and super tender in the middle.  It's incredible.  Wherever you are, fly to Chicago and try this.  You will never eat regular bacon again.

This is what I ordered.  It was voted MVP by the table...or, by me... I can't remember.  It was so different and unique.  I can't stop thinking about it.  I'm such a sucker for pork belly.  So, me being the carnivore that I am, I ordered more pork belly.  This was the pork belly bibimbap with fried egg, brown rice, with garlic, ginger & kimchi.  I loved the idea of having asian flavors in a breakfast dish.  I'll try to make something like this in the near future.  Stay tuned and stay hungry!
